This is because our iris is made out of 2 components, the exterior one contains varying amounts of melanin which gives the different eye colours.

Extra: (The interior one contains a fixed high amount of melanin so that light can only enter the eye through the pupil and the light entering can be controlled via pupil accomodation reflex.)
