Well, first you would convert the 2 pounds into ounces, which would be 32. (16 oz in a pound) Add the 3 oz to 32 which is 35. So, then all you have to do is subtract 35 from 56 and you have your answer. Which is 21. The kitten gained 21 oz. Or 1 pound 5 oz.
